Curried Chicken Salad Pita

Butterkäse cheese, chicken, curry and more make for a quick and tasty lunch.

Ingredients

  • 1 cup rotisserie chicken, coarsely chopped
  • ½ cup Roth® Butterkäse, shredded
  • ⅛ cup pecans
  • ⅛ cup golden raisins, finely chopped
  • 3 tablespoons scallions, minced
  • ⅓ cup light mayonnaise
  • 1 teaspoon curry powder
  • ¼ teaspoon cumin powder
  • 1 yellow tomato, sliced
  • ½ cucumber, sliced
  • 1 pita round, cut in half

Method

  1. In a 1-quart mixing bowl, combine chicken, Roth® Butterkäse, pecans and raisins.
  2. Add scallions, mayonnaise, curry and cumin; mix well and refrigerate for approx. 1 hour.
  3. To serve, layer tomato and cucumber in pita and top with chicken salad.
